Craving for a sweet fix …., Le Sweet Crepe Dujour is just the recipe for you! In French, the term’ dujour' means literally “of the day.” The MP recipe 'of the day' is a delicious, protein packed, low-fat, crepe that can be enjoyed for breakfast, lunch or dessert, and best of all, prepared, cooked and ready to eat all within 2 minutes! Every mouthful is so deliciously sublime!
5 egg whites
1/2 tub (85g) *coconut flavored chobani yogurt
1/2 small banana, sliced
1/2 cup fresh blueberries, washed
1 tbls pistachio nuts
1 tbls flaked almonds
sprinkle with cinnamon
light drizzle of maple syrup
canola oil cooking spray
flaxseed meal when serving
*substitute with your preferred choice of flavored yogurt
Step 1: Separate egg yolks from whites into a mixing bowl or alternately, add 3/4 cup liquid egg whites to the bowl. Gently whisk til light and fluffy.
Step 2: Spray a non-stick frying pan with oil and heat on medium-high heat.
Step 3: Pour egg whites into pan, cook for 30+secs, flip and repeat.
Step 4: Transfer egg crepe to serving dish. Step 5: Top with yogurt, banana and blueberries, then with almonds and pistachios. Dust coat with cinnamon, and flaxseed meal and drizzle lightly with maple syrup just before serving. And, there you have it…. ’Sweet Crepe of the day!.’ Enjoy.
